Banana Peanut Butter Yogurt Parfait

No-cook, 5 minutes | Serves 1

  • 1 ripe banana (potassium)
  • ¾–1 cup plain Greek yogurt (calcium) 
  • 1–2 Tbsp peanut butter (magnesium)

Optional: pinch of sea salt or sprinkle of pumpkin seeds/almonds

Instructions: Slice half the banana and mash the other half with the peanut butter. Layer yogurt, mashed banana-peanut butter mixture, and banana slices in a cup or bowl. Top with a pinch of sea salt or nuts if desired.

Creamy Avocado Banana Spinach Smoothie

No-cook, 5 minutes| Serves 1

  • ½–1 ripe avocado (potassium) 
  • 1 ripe banana (potassium) 
  • 1 big handful fresh spinach or kale (calcium + magnesium) 
  • ½–¾ cup plain Greek yogurt or milk (calcium)

 

Optional: tiny pinch of sea salt or 1 tsp peanut butter

Instructions: Add all ingredients to a blender and blend until smooth. Add a little extra milk or yogurt if it’s too thick. 

Warm Sweet Potato Lentil Spinach Bowl

One-pot, ~15 minutes | Serves 1–2

  • 1 medium sweet potato (potassium)
  • 1 cup cooked lentils (canned, rinsed – potassium)
  • 2 big handfuls fresh spinach or kale (calcium + magnesium)
  • Pinch of sea salt (sodium)

 

Optional: dollop of Greek yogurt or splash of milk (calcium)

Instructions: Microwave the sweet potato for 6–8 minutes until soft. Warm the lentils, then mash the sweet potato flesh with the lentils and stir in the spinach until wilted. Season with sea salt and top with yogurt if desired.
